Most of those techniques were nearly lost within two generations of industrial food.<\/p>\n<p>The revival began as restaurant research and has moved outward. Lacto-fermented vegetables, koji applied to local grains, and garums made from fish trim and yeasted barley are now standard in kitchens far below the fine-dining tier.<\/p>\n<p>The chemistry is worth understanding as a diner. Lacto-fermentation acidifies; koji breaks down protein and starch into glutamates and sugars; a garum does both, slowly. That was the whole point.<\/div>\n<p>The everyday version is where it gets interesting: bakeries running century-old rye starters, home cellars of pickled ramsons, and a supermarket aisle of soured dairy that outnumbers most countries&#39; cheese counters.<\/p>\n<p>For a traveller, the accessible entry point is a rye bread lunch \u2014 dense sourdough, pickled herring, dill, a soured cream.
